Chunks can be used either wet or dry. Using Chunks dry creates instant smoke, will not cause a drop in temperature, and gives off a light smoke flavor. If you are a fan of a more powerful smoke flavor, you can choose to soak the Chunks first. As a result, steam will develop first and the temperature in your barbecue will start to drop. BBQ Flavour Hickory should always be used in moderation due to the heavy smoke flavor.
