Chunks can be used either wet or dry. Using Chunks dry creates instant smoke, will not cause a drop in temperature, and gives off a light smoke flavor. If you are a fan of a more powerful smoke flavor, you can choose to soak the Chunks first. As a result, steam will develop first and the temperature in your barbecue will start to drop. BBQ Flavour Chunks Oak are only suitable for smoking larger pieces of meat, it will give a bitter aftertaste when smoking for example chicken and fish.
